👨🍳 Authentic Cooking Method:

Step 1: Marinate the Chicken:-
In a large bowl, mix:
• Chicken, curd, fried onions (half), ginger-garlic paste, biryani masala, lemon juice, mint, coriander, green chilies, salt, and 2 tbsp. oil.
• Marinate for at least 2 hours (preferably overnight).

Step 2: Parboil the Rice
• Boil 2 L of water with whole spices and salt.
• Add soaked basmati rice (soaked 30 min) and cook till 70% done.
• Drain immediately and spread on a flat plate to cool.

Step 3: Layering the Biryani
• In a thick-bottomed pot, add ghee and layer the marinated chicken.
• Add a layer of rice.
• Sprinkle saffron milk, fried onions, mint, coriander, and a drizzle of ghee.
• Repeat until all ingredients are used, finishing with rice and saffron milk on top.

Step 4: Dum Cooking (Steam Seal)
• Cover the pot tightly with a dough-sealed lid or heavy lid.
• Cook on high flame for 10 minutes, then low flame for 25 minutes.
• Let it rest for 10 minutes before opening.
• Gently mix from bottom to top.

Step 5: Serve
• Serve hot with Raita or Mirchi 🌶️
