  1. Prep: Ensure cooked rice is completely cooled and grains are separate.

  2. Scramble the Eggs:

    • Heat 5 ml oil in a wok.

    • Add beaten eggs and scramble lightly. Remove and keep aside.

  3. Stir-Fry Vegetables:

    • Add remaining oil, sauté onions, carrots, and capsicum on high flame for 1–2 mins.

  4. Combine:

    • Add rice, soy sauce, vinegar, salt, and pepper. Toss well on high flame.

  5. Add Eggs:

    • Mix scrambled eggs into the rice and toss everything for 2 more minutes.

  6. Finish:

    • Add chopped spring onions and serve hot.
