🍳 Authentic Method – Step-by-Step

Step 1: Prepare the Rice

Wash 150 g basmati rice and soak for 15 minutes.

Drain and keep aside.

Step 2: Marinate the Prawns

Mix together:

200 g prawns

2 g turmeric

3 g Chilli powder

A pinch of salt

Marinate for 10 minutes.

Step 3: Sauté the Aromatics

Heat 15 g ghee + 20 g oil in a pan.

Add whole spices (bay leaf, cinnamon, cloves, cardamom).

Add sliced onions → sauté until golden.

Add ginger-garlic paste → cook until the raw smell goes.

Add tomatoes & green chilies → cook till soft.

Step 4: Cook the Prawns

Add marinated prawns to the masala.

Cook for 3–4 minutes until they curl and turn pink.

Step 5: Add Rice & Liquid

Add soaked rice and gently mix.

Pour:

150 ml coconut milk

250 ml water

Add salt & garam masala.

Step 6: Dum Cooking

Cover and cook on low flame for 12–15 minutes.

Rest for 5 minutes before opening.

Fluff gently.

Step 7: Serve

Garnish with fresh coriander & serve hot with raita or salad.
