Balushahi, also known as Badeshi in South India, is a classic Indian festive sweet made with flour, ghee, and sugar syrup. Crispy on the outside, soft and flaky on the inside—this rich dessert is a timeless delight.

👨‍🍳 Authentic Method – Step-by-Step

1. Prepare the Dough

  1. In a bowl, mix Maida, baking soda, and ghee.

  2. Rub with fingers to form a breadcrumb-like texture.

  3. Add curd and a little water (as required) to make a soft dough.

  4. Do not knead hard—Balushahi dough should be loose and flaky.

  5. Rest the dough for 15–20 minutes.


2. Shape the Balushahi

  1. Divide dough into 4 equal balls.

  2. Gently press each ball and make a small dent in the center.


3. Frying

  1. Heat ghee/oil on low flame (Balushahi should fry slowly).

  2. Add shaped pieces and fry on low heat until golden and crisp.

  3. Remove and keep aside.


4. Prepare Sugar Syrup

  1. Add sugar + 60 ml water to a pan.

  2. Heat until it reaches one-string consistency.

  3. Add lemon juice (to prevent crystallization).

  4. Add cardamom powder and saffron (optional).


5. Coat the Balushahi

  1. Dip the fried Balushahi in warm sugar syrup for 3–4 minutes.

  2. Remove and garnish with chopped pistachios/almonds.

  3. Serve warm or at room temperature!
