👨‍🍳 METHOD OF PREPARATION

Step 1: Sugar Syrup

  1. Heat 0.250 liters water and add 0.400 kg sugar.

  2. Boil until one-string consistency.

  3. Add crushed cardamom and rose water.

  4. Keep warm (not boiling).

Step 2: Dough Preparation

  1. Grate or crumble khoya finely.

  2. Add maida and baking powder, mix gently.

  3. Add milk gradually to form a soft, crack-free dough.

  4. Rest for 10 minutes, covered.

Step 3: Shaping

  1. Divide dough into equal portions.

  2. Roll into smooth balls without cracks.

Step 4: Frying

  1. Heat ghee on low flame.

  2. Fry jamuns slowly until golden brown, stirring gently.

  3. Remove and drain excess ghee.

Step 5: Soaking

  1. Add hot jamuns directly into warm sugar syrup.

  2. Soak for minimum 2 hours before serving.
