👨🍳 Method of Preparation

Prepare Batter:
In a mixing bowl, combine besan, curd, water, turmeric powder, salt, sugar, and ginger–green chilli paste. Mix into a smooth, lump-free batter of pouring consistency. -
Resting:
Allow the batter to rest for 10–15 minutes. -
Steaming:
Just before steaming, add fruit salt and gently mix. Immediately pour into a greased dhokla tray. -
Cook:
Steam for 15–18 minutes on medium heat until a knife inserted comes out clean. -
Cooling & Cutting:
Allow to cool slightly, then cut into equal square portions. -
Tempering:
Heat oil, add mustard seeds, curry leaves, and slit green chilies. Pour evenly over the dhokla. -
Garnish:
Garnish with freshly chopped coriander leaves.
